The only thing I love more than one mince pie is two mince pies.
I'm seeking the perfect pastry recipe. My recipe contains the usual pastry ingredients, plus some ground almonds, grated rind of lemon and an egg yoke. It's good, but it's not superb.
I'm sorry that this post is not very gluten-free-friendly, Anne. I hope that you are able to make or otherwise get your hands on gluten free mince pies....?

That's OK - in fact suggesting ground almonds, lemon rind and egg yolk give me some ideas for making gluten-free pastry more palatable.
Ooo, you're pastry sounds yummy! I've always done plain shortcrust, my mother's recipe, (ofcourse, I mean, whose else?!) but your's does sound rather special. Can I have the recipe please?
I mean, I know I have a list of ingredients and I'm pretty good in the baking department, but a few clues on quantities would be tres useful. Please?
(Not really being cheeky, just sounds like it x)
Hi Ruth!
On my homemakers blog: www.rightthinkeronhomemaking.blogspot.com I have a post about "The best apple pie", and my recipe for crust is there. It simply is the most delicious pastry crust.
I haven't even been blogging much because I am going like a madwoman in the kitchen!

I realy hope you're feeling better! I'm about to give in and take some 'day nurse', which will knock me out for a bit (I'm not driving or operating heavy machinery today!!!)
Husband's off today so he's done the school run (yippee - and I promised to be out of my dressing gown when he returned ... out of my dressing gwon and fully dressed, I should add!!!). Then we've got to take Isabel to find out whether they can improve her hearing (nothing too serious - she'll be fine when she's older, but for now her ears are often blocked and this is affecting her ability to hear (and speak).
Thanks for the tip, RT, I'll be dropping by later! Enjoy the kitchen - it's a great time of the year for all of that - I just LOVE the smell of home-baking.
Louise - I'll be back with the recipe, promise - but I shouldn't be here at the mo!
And I know that my craving for mince pies comes on the back of a recent post about reducing saturated fat intake.... I can offer a recipe for fat free fruit cake (yes, fat free) if anyone's interested. But I've not tried it out yet..... (basically substitute pureed prunes for butter.. and make sure you've plenty of loo roll I guess... sorry about that!)
You see, I'm such a bad mum and I'm surrounded by other so good mums. Aedan has suffered with his ears, (or, have we suffered with Aedan's ears?!) for years. He used to get dreadful ear infections everyso often but I only took him to the doctor if Calpol didn't relieve the pain, then I knew it was really bad and he needed antibiotics, (which I avoid LIKE THE PLAGUE!) but as he has got older, the infections have become less and less.
They used to block up too and I could tell because his speech was a) a little slow to begin with and b) rubbish! We perservered and I could tell when he was hearing because his speech was ok, but they still block up fairly often and his speech tails off.
I never took him to get his hearing checked, (I'm such a bad, bad mother...) but mum's ears were the same and apparently, it's a shortened tube that improves with age. (And probably gets worse again, with age. Mum will let me know when she gets there!)
He does seem to be much better, now he's grown a bit.
I just hate going to the doctors. Heaven help my children if they are ever seriously ill!
x
Conincidentally, I can tell when the pain's really bad for him, because he'll be sick. He can't 'do' pain.
Thank goodness he's not a woman...
I am interested in the ear discussion just because Mark has told me a few times recently that he has a bird in his ear. (I think his ear is ringing a bit.) No ear infections so far, though I was apparently the queen of them as a babe. One time at age 2 I apparently waltzed into the dr.'s office and said "Hi Doctor Covington, I have an ear infection and I need some ampicillan".
We are mostly better today, though the boys' noses are pretty full and Mark has quite a cough, but I think we'll live... :)
